Today I’m going to be sharing my favorite Christmas time cookie…. And an update on the Christmas QAL…. OH! And I have a freebie for you, so read till the end!!
First up the cookies…. Lemon Shortbread Stars!
I got the recipe for these Lemon Shortbread Stars from one of the Women’s Weekly’s cookbooks… many years ago. I just loved the way they looked and of course tasted, and they have become a family favorite! I’ve made some tweaks to the recipe over the years, and really, you can use any shortbread recipe, but this one is quite nice.
I am usually the one who makes them… the yellow bits are done with food coloring and I tend to get that all over me…
But they are delicious and fun to make!
Lemon Shortbread Stars
Ingredients
- 2 cups Plain Flour
- 2 tbsp Rice Flour
- 200 g Unsalted Butter
- 1/3 cup Icing Sugar
- 1 tsp Finely Grated Lemon Rind
- 2 tbsp Lemon Juice
Lemon Glaze
- 1 cup Icing Sugar
- 2 tbsp Lemon Juice
- Yellow Food Coloring
- Silver Cachous
- toothpick
Instructions
- Preheat oven to 180C
- Mix flour, butter and sugar in food processor until mixture is crumbly
- Add lemon rind and juice. Mix until it forms a dough.
- Turn out dough onto a lightly floured surface and knead until smooth.
- Roll out dough and cut out star with cookie cutter
- Bake for 10 min or until very light brown
- Cool on wire rack
Lemon Glaze
- Combine Icing sugar and lemon. Stir till smooth.
- Dip biscuits face down in glaze.
- Dip toothpick in yellow food coloring, and draw lines into icing from the center of the star out, before it sets.
- Place a silver cachou in the middle!
