It’s going to be a busy week for me, having three days away from the home for medical appointments, so I need a good plan 🙂
LAST WEEK’S THIS AND THAT
I guess you already know how last week went if you read my last post… thank you for all your sweet comments and I will get around to replying as soon as I can. The funeral is on Tuesday, in Germany, and we are hoping that they can set up a live stream or at least tape it for us to watch later.

IN THE KITCHEN
Back to normal in the kitchen now with plumbing restored! Yay!
Next week I have jury duty, so I would like to have a meal prep day in the kitchen this week, but it’s going to be a busy week.. so I’ll play that by ear.
Menu Plan:
You’ve probably noticed that I plan for leftovers…. in general I don’t enjoy cooking (I’d rather be in the sewing room, lol!), so when I cook I like to make more, so we can have leftovers.
Another reason for so many leftovers is that I generally cook meals that I used to cook when we had all the kids home. Now that I am only cooking for DH, DS & myself, I like that we can stretch the same meals for another day.
This week I might freeze the leftovers for next week, but I’ll see how I go.
Monday – Butter Chicken – DS cooking this!
Tuesday – Leftovers
Wednesday – Taco Salad – cook meat sauce enough for some to freeze for next week
Thursday – Meat Pies
Friday – Beef Burgundy – maybe freeze half for next week
Saturday – Leftovers OR Tuna Casserole and make an extra for next week
Sunday – Easy Freezer Meal

Didn’t get any sewing done last week, hoping for a better week even though I will be out three days. I am hoping I’ll have enough energy to do a bit in the evenings

I hope you are able to see livestream for your aunt’s service! Good luck cooking ahead for your jury duty. We have two favorite leftovers – pot roast and meatloaf. We enjoy sandwiches from these leftovers as much as the main dish!
I hope you are able to get a live stream going for your aunt’s funeral.
I always cook double amount of potatoes so that I can pan fry them the next day. I also make double meatballs (large Dutch style ones) in sauce so we can have them again the next day.
My husband loves leftover lasagna, so I make a big batch of that when I make it. I really like to freeze homemade soups (not noodle ones) for lunches especially. Paired with homemade whole wheat sourdough, you can’t go wrong.
I hope you’re able to “attend” the celebration of “Mom’s” life. It’s good to remember the blessing that special people are to us.
We always cook with an eye towards leftovers and often cook enough to put some in the freezer too. Our favourite is always soup and often lasagna and cabbage rolls.
Hope you are able to participate in the celebration of life for your family member…and further hope that jury duty turns out to be nothing.
